Frittatas with Egg Whites

Frittatas - Egg whites
 
What you need
1 bell pepper - finely chopped
Few Mushrooms - diced or finely chopped
small onion - diced or finely chopped
Meat lovers can add chopped cooked meat pieces (Chicken/Bacon/Sausages)
Seasonings
small amount of basil, smoked paprika, cumin, chili
1-2 garlic and small ginger - finely chopped.
1/2 cup of shredded cheese (optional)
1/2 cup of low fat milk (Optional)

Heat the oven to 400 F
1. Saute the seasoning ingredients in a Pan
2. Season the veggies and add salt and pepper to taste
3. Add cheese (optional)
4. Whisk the Eggs whites or whole eggs (4-5) in a large bowl and add the sauted seasonings and veggies
5. Spray a mini muffin tins with a non stick spray
6. Fill in the Muffin cups almost to the top with egg mixture.
7. Bake for about 8 to 10 minutes
8 Loosen the Frittatas with a spatula from the Muffin cups and slide it onto a platter.
Serve and enjoy
